An Overview of Indirect Heat in Grilling and How to Choose the Best Charcoal for Such Method
April 13, 2021Indirect cooking method is a barbecue cooking technique in which the food is placed to the side or above the heat source instead of directly over the flame. The food being cooked is placed in the centre, with a drip tray underneath in order to collect fats and oils and prevent flare ups.
Indirect cooking method is designed to cook larger meat including pork shoulders and whole chicken. It also works well on tougher meat such as brisket and ribs that would burn if cooked using a direct flame. This method of cooking generates a more moderate temperature about 135°C –177°C and allows for an easier introduction of wood smoke for flavouring. With the lid on the kettle and the vents open, hot air will circulate around the food and provide even and consistent cooking. There is no need to turn the food.
This particular cooking method is achieved through igniting only some burners on a gas barbecue or by piling coals to one side of a charcoal pit. A drip tray is placed below the food to prevent fat from the food igniting and generating a direct flame. One ideal way of doing so is by using Heat Beads® BBQ Briquettes.
How to Choose the Best Charcoal for Such Method
In this method the Heat Beads® BBQ Briquettes are placed at the sides of the kettle barbecue. The amount of Heat Beads® BBQ Briquettes will vary depending on the degree of heat desire. If you are opting for a high heat indirect cooking method, you should use approximately 3.5kg of Heat Beads® BBQ Briquettes, or one Heat Beads® BBQ Chimney filled as high as you can.
If you want medium heat instead, use approximately three kilograms of Heat Beads® BBQ Briquettes, or one Heat Beads® BBQ Chimney filled to level with the top. However, for a low heat indirect cooking method, use approximately 2.4kg of Heat Beads® BBQ Briquettes, or a Heat Beads® BBQ Chimney filled to the three quarter level.
